The Ritz-Carlton Bacara, Santa Barbara–the premier oceanfront resort along the Gaviota Coast–welcomes premier central coast winemakers for monthly wine pairing dinners – Paul Lato Wines in March, The Hilt Estate in April, and Grassini Family Vineyards in May. Each special evening will be in the intimate and private Angel Oak Wine Cellar below Angel Oak–The Ritz-Carlton Bacara’s fine dining restaurant. The carefully curated four-course pairing menu will bring forth the tasting notes of the celebrated wines in the company of the winemakers. The pairing menu will be created in collaboration with Chef de Cuisine of Angel Oak, Susanto Bhattacharya. Guests will enjoy a warm welcome at The Bacara Wine Tasting Room, before heading to Angel Oak for dinner and concluding at the private wine cellar room with a crafted dessert by Pastry Chef Christine Rosell.
The first dinner in the series on March 28th is the Angel Oak x Paul Lato Dinner, which starts at 6:00 p.m. Winemaker Paul Lato develops his wine with the philosophy that “all the greatest wines possess authenticity, harmony, and elegance. These are the qualities I constantly try to capture in my wines. The ultimate goal is to create wines that are seamless and textural with enough structure and balance to complement fine cuisine.”
The menu for Thursday March 28th evening will begin with Tuna Crudo, then onto the First Course of Coquilles Saint-Jacques paired with 2021 “Le Souvenir” Chardonnay, followed by the Second Course of Bone Marrow Tartare paired with 2021 “Stand By Me” Pinot Noir, and the Third Course is a Veal Ossobuco paired with 2021 Syrah “II Padrino”, and wrapping up the Four Course dinner with Ricotta and Chocolate Tart.
