Producers of spirits, beer, and wine are ready to adjust to Santa Barbara’s desalinated water as it flows into the Funk Zone pipes.
Taste and lab testings are underway and no problems have been reported.
At Cutler’s Artisan Spirits, Ian Cutler says he’s not too worried but will have the water tested to determine its makeup. He says sometimes the minerals, or lack of them can give his product a different taste.
For now Cutler’s is bottling and shipping what it has on site. Production will resume in the next couple of weeks.
